


Potato salad – Franconian style ("Fränkischer Kartoffelsalat")

Germans love potatoes, especially potato salad. Each region has its own recipe for potato salad with and without mayonnaise. Mostly this kind of salad is served with meat. Today I would like to show you how to prepare a Franconian style potatoe salad. This side dish is perfect e.g. for a cookout and also fits to all kinds of other culinary occasions. By the way – if you are on a diet, you don´t have to worry at all, cause this salad is made without mayonnaise. | ||
So lets start cooking. This is what you need: 1 kg potatoes 200 ml broth 5 tablespoons wine vinegar 5 tablespoons cooking oil 1 onion 50 g smoked green bacon salt and pepper sugar |

Please do not peel the potatoes before cooking. Cook them in a large cooking pot. Depending on the size of the potatoes it takes about 20 to 40 minutes to get them done. As soon as the potatoes are cooked, pour the hot water away and start peeling them. If you are afraid of burning you fingers, just use a fork and stick it into the potato. You easily can scrape the peel off and your hands won´t be harmed. You also can wait a few minutes but don´t wait too long, because it´s much easier to peel the potatoes as long as they are hot. | ||
Now you can slice the potatoes and put them into a large bowl. | ||
Peel the onion and cut it into small dices. Also dice the smoked green bacon and roast the onions and the bacon in a pan. Now put some salt, pepper, a pinch of sugar, the diced onions and the roasted bacon into the bowl. Then pour some heated broth and some wine vinegar over the potato slices and all other ingredients. |
Enjoy the potato salad as long as it´s warm. The flavor becomes even more intensive, if you eat it the next day. If you feel like wanting to add some mayonnaise – just do it. You even can add some more wine vinegar or broth if you like.
